Ingredients:
4 cups chopped fresh green leaves (lettuce, arugula, spinach, etc. according to your preference)
1 cup fresh chopped pineapple (fresh or canned)
1/2 cup sliced cucumber
1/2 cup cherry tomatoes or cherry tomatoes (optional)
1/4 cup chopped fresh mint leaves
1/4 cup chopped fresh coriander leaves (optional)
1/4 cup roasted almonds or hazelnuts (optional)
1/4 cup feta cheese or curd cheese (optional)
Salt and pepper
For the Sauce
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon honey or maple syrup
1/2 teaspoon turmeric powder (optional)
Preparation:
In a large salad bowl, add the green leaves, fresh pineapple, cucumber, and optional cherry tomatoes.
Sprinkle with fresh mint leaves and optional coriander leaves.
In a separate bowl, whisk together the olive oil, lime juice, honey or maple syrup, and optional turmeric powder for the dressing.
Pour the dressing over the salad and season with salt and pepper to taste.
Optionally sprinkle with toasted almonds or hazelnuts and feta or curd cheese.
Gently toss the salad to combine all the ingredients with the dressing.
